Monster Kitchen and Bar has announced two changes to the culinary team, following the departure of executive chef Sean McConnell.

Melbourne-based chef and hospitality consultant Ian Curley has joined the restaurant as creative culinary partner.

The British-born chef’s 25-year career in Melbourne has seen him at the helm of some of the city’s most iconic restaurants, including nine years at The Point Albert Park and more than a decade with the European Group.

Curley says he is delighted to be working with the team.

“For me it is about evolving Monster and building on its already stellar reputation – I can’t wait to help develop the food and beverage personality of the venue even further,” he says.

Meanwhile, long-time head chef Daniel Flatt, who has lead the kitchen for over four years, is taking the reins as executive chef.

Monster Kitchen & Bar located within designer hotel Ovolo Nishi Canberra, formerly Hotel Hotel, and currently holds one chef’s hat.

Dave Baswal, chief operating officer for Ovolo Hotels Australia, welcomed the news.

“We are thrilled to have Ian Curley on board as creative culinary partner for Monster and to have Daniel taking over the reins,” he says.

“As a master of accessible, delicious food across all cuisines and as creator of several iconic restaurants, Ian is perfectly placed to assist with this evolution.”
