Riserva Baia is expanding its footprint with the opening of Mediterranean eatery and bar Baia Di Vino.

The venue will be spearheaded by head chef and co-owner Dino Mohsin (Riserva, Rockpool Bar & Grill) along with Frank Ciorciari (Riserva, Sette Bello) and Gian Chiaravalle (Riserva, Arco).

The menu has been influenced by the bayside surroundings, with dishes including tuna tartar with pickled daikon and betel leaf, fried sardines with fennel cream and orange emulsion and king prawn with cannellini bean puree, chili, lemon and parsley.

Sommelier Vivian Man has designed the wine list which heavily features European varietals. Wine will be available by the glass alongside a premium selection via Coravin.

Riserva Baia will be open for dinner Monday and Tuesday and lunch and dinner Wednesday to Sunday.

Official open date is 12 April.
