Bonnie’s Wine & Food is set to open at the back of Bondi Beach Public Bar on Wednesday 19 September.

Maurice Terzini, chef Monty Koludrovic and sommelier James Hird are behind the venue which is based on an Italian enoteca with an Australian twist.

“It’s a place where you can share wine by the glass or by the bottle while enjoying a small snack or a few plates in an intimate space,” says Terzini.

The food menu will continually evolve with a focus on small plates designed for sharing. Launch dishes include grilled sardines with salsa verde, marinated tuna with peppers, shallots, lemon, salami, parsley and fennel and meatballs Calabrese. Pizza fritta will also be available in red, white or green.

Hird’s wine list revolves around sustainable and natural wines that shine a spotlight on Australian producers. Between four and five Australian varieties will be on the revolving list at any one time, with all wines served chilled.

“You’re not here just to navigate an eclectic collection of hard-to-find real wines from cult growers,” says Hird. “You’re here to have fun and understand a little more about some great Australian producers with a few off-list offerings from further afield.”

Cocktails will also be on offer including Negroni Sbagliato, spritz and Italian bar drinks.

Bonnie’s is open Wednesday to Sunday from 6pm.
