Cacio e pepe is a traditional Roman dish made with three staple ingredients: pasta, cheese and pepper.

It’s one of the signature dishes at Italian restaurant Marta, located in Sydney’s Rushcutters Bay. Here, head chef Claudio Barzano shows us how to make the perfect cacio e pepe from scratch.
