Sydney’s Tokyo Lamington is teaming up with Le Bajo Milkbar in North Melbourne for a three day pop-up.
The event will be held on 17-19 June 2022 at the Le Bajo Milkbar venue and will focus on classic pastries that incorporate Japanese flavours.
Tokyo Lamington have turned two of Le Bajo’s best-selling creations, crispy melon pan and mango earl grey shortcake, into lamingtons.
“When creating a melon pan lamington we had to add a melon cream in the centre as I always get disappointed when I have a melon pan and there is no melon cream,” says Tokyo Lamington Co-owner Eddie Stewart.
Tokyo Lamington have also added its much-loved yuzu meringue lamington to the selection.
Customers will be able to purchase a pack of three lamingtons (priced at $26 per pack) encased in limited edition boxes.
A limited number of packs will be available for takeaway only.
