Sydney pub the Hotel Downing is upping its culinary game with the launch of a new bistro.

Fugo is spearheaded by Hello Auntie’s Cuong Nguyen and childhood friend Luis Gil, with the pair focusing on Latin American flavours Gi grew up with.

“Sydney is known as the epicentre for multicultural food, yet Latin American cuisine seems to be underrepresented,” says Gil. “Every Latin culture has so much to offer in terms of food and flavour, so we want to share our passion for the culture in Sydney.”

Open for lunch and dinner Monday to Saturday, the menu will offer staple dishes including a sandwich stuffed with rump steak, chimichurri, fried egg, ham lettuce, cheese and mayo as well as weekly specials.

Taco Tuesday features a selection of proteins including pork, prawn, beef, lamb, fish and mushroom paired with greens, with diners able to enjoy three for $20.

There will also be a monthly gnocchi special inspired by dishes made by Gil’s family. The first is a classic beef and tomato ragu, with coming alternatives set to showcase “a variety of flavours that are inspired by my childhood nostalgia of my parents cooking in the kitchen”, says Gil.
