After the success of the Bar Red pop-up for Negroni Month back in September, Sydney’s The Dolphin has announced it will become a permanent fixture for the venue.

The bar-inside-a-bar concept will be located in the venue’s former Wine Room, and will be held every Thursday to Saturday evening.

The Bar Red menu will feature a range of tipples including a Tiramisu Negroni, Banofee Pie Old Fashioned, Wild Strawberry Americano, Raspberry Beret Negroni, and Delfino Sgroppino Spritz.

Food-wise, guests can order The Dolphin’s much-loved pizza range including favourites such as the Peperoni Di Bufala (spicy pepperoni, tomato, buffalo mozzarella) and Mare e Monti (king prawns, pancetta, fermented chilli, xo).

There’s also an aperitivo session from 4-6pm each day offering mini martinis ($12); frozen Tommy’s Margaritas and Pina Coladas ($12); pizzettas ($12), and other snacks such as focaccia, olives, and salumi grissini from $5.

Bar Red by The Dolphin is on from 4pm Thursday to Saturday.
