Jethro Canteen, a new caf in Richmond Victoria, has opened in an old medical centre.
Former head chef and previous co-owner of the caf Merchants Guild, Paul Davies, has come on board as head chef. The venue will soon offer two menus, with a take-away menu to join the current in-store one, which features dishes such as waffles with cereal milk panna cotta. Less common items will also be featured in the future.
“Everything points to insects playing a big part of our diet in the future,” said Billy Zarbos, founder of Jethro Canteen. “They are super good for you, packing in nutrients at a far denser rate than other, more traditional foods, and they actually taste good and add great texture.”
A Shady Lane house blend and rotating single origin options are provided by Wide Open Road Coffee, along with a batch brew and cold drip, as well as a range of specialty teas, Prana chai and a lattes made with camel's milk.
