The fallout from Made Establishment’s collapse continues, with chef Matt Wilkinson announcing his departure from Crofter Dining Room & Bar.
Crofter opened in January this year as part of rebranding efforts, which saw three of the group’s Hellenic Republic venues overhauled as well as Calombaris flagship Press Club.
Taking over the space previously occupied by Hellenic Republic Brunswick, the restaurant plated up a British-influenced menu with vegetable-centric dishes, roti, wood-fired fare, for just four weeks before all of Made Establishment’s venues were closed without notice.
Earlier reports had suggested Wilkinson planned to buy the venue. However, according to Good Food he was unable to negotiate a deal with the building’s landlords. In a statement posted to Instagram, the chef thanked everyone that helped bring the restaurant life, including staff, farmers, producers and customers.
“I am angry and sad about this whole scenario,” read the statement. “Angry that the lies that consume big business directors I feel will always be believed, Angry that the government can’t see our industry is in strife and offers no real support or future hope.”

While the future of Crofter and Made Establishment’s remaining 11 venues are yet to be decided, Wilkinson will continue his work as founder of The Pie Shop and creative director of Made for Gin with Four Pillars Gin.
The full extent of Made Establishment’s woes, including supplier debts, will be revealed on Thursday 20 February at the first creditors meeting. Administrators KordaMentha are reportedly looking for a quick sale of the group’s assets, seeking buyers to take over leases and make “fair and reasonable” offers for plant, equipment and stock.
