Specialising in creative bagel flavours and fillings, Schmucks Bagels is preparing for its grand opening on Guests Lane, Melbourne.
A tribute to founder Jeremy Marmur’s Jewish heritage, Schmucks will deliver Polski bagels – European in style – in a range of flavours, available for lunch and dinner.
Marmur is working with Ben Avramides and Tommy McIntosh from Tommy Collins, as well as chef Simon Winfield.
The team has developed a range of innovative and classic bagels – ranging from rye to Vegemite – made in the traditional European style, steamed instead of boiled and filled with seasonal, local ingredients.
Menu items include the Smokin’ Chick on a sesame bagel, comprising smoked chicken, tarragon mayonnaise, capers, julienne carrots and green leaves. There’s also the Hippie Slicker on a seedy bagel, with grilled cauliflower, carrot, cumin, hummus, house pickles, lemon dressed watercress, and tomato. The Miso Schmick on a sesame bagel comes with miso salmon, wasabi peas, Kewpie mayonnaise, pickled ginger, pea shoots and iceberg leaves; and the Schmoozer on a seedy bagel boasts hickory smoked beef brisket, BBQ sauce, chimichurri, iceberg lettuce and tomato.
Breakfast bagels include bacon and egg with tonkatsu; sausage and egg with Kewpie mayonnaise; or the Blueberry bagel with a choice of almond butter or lemon curd.
A selection of seasonal salads and sweet treats will be on offer, as will a range of sides and condiments including a dedicated range of crisps and pickles by McClure’s, as well as house-made bottled sauces, also available to purchase.
Schmucks Bagels is due to open on 16 November.
