Hyatt Regency Sydney is launching its new rooftop bar, Zephyr Bar, this month. The latest edition to the Hyatt Regency Sydney’s redevelopment offers vermouth inspired cocktails and rums sourced from around the globe with vintage originals from the 1950’s and 60’s.

Zephyr Bar overlooks Darling Harbour, with a drinks list curated by international mixologist, Grant Collins and led by bar manager, Mirko Simonazzi.

“We’ve been able to create a variety of cocktails using unique barrel aged vermouths served on tap and rums using hypersonic and sous vide infusions. The hypersonic infuser is able to ‘barrel age’ cocktails in seconds and infuse spirits in minutes to create unique and innovative drinks,’ said Collins.

Zephyr will also feature Sydney’s largest range of aperitifs and digestives as well as frozen cocktails using liquors, spirits and freshly hand squeezed juices.

The food menu includes contemporary dishes infused with fortified wines and rum reductions, as well as favourites such as pork and herb meat balls and a classic charcuterie board.

“Zephyr Bar has shaken up the Sydney bar scene with a its rooftop location offering Sydneysiders and hotel guests an invigorating meeting place for friends or work colleagues to relax, unwind, mingle and take in the best of the city’s harbour views,” said Malcolm Zancanaro, general manager, Hyatt Regency Sydney.

Zephyr Bar is now open from Tuesday to Sunday.
