Pan-Asian venue Wok This Way will open in Maitland Riverside Plaza on 13 October.

The new venue from Panthera Hospitality Group will offer a range of dishes inspired by street stalls. Think starters like chicken spring rolls and chicken satay, as well as soups such as the spicy Tom Yum Koong and wonton noodle soup.

Green, red and Penang curry will also be served up alongside a selection of stir fries and noodle dishes, with chicken, beef, prawn and vegetable options. Chef Pondthip “Nikki” Trakoolkerd will also offer a signature Pad Thai.

The opening marks Trakoolkerd’s return to the region. Before a stint at The Star in Sydney, Trakoolkerd worked the woks at Kotara restaurants, Noodle Hut and Kinn Thai.

“I have cooked for thousands of people, but I love preparing fresh, quality one-off dishes for locals,” she says. “This is also a way to show what other dishes I can make.”

The launch of Wok This Way will be the beginning of a major revamp for the Panthera Hospitality Group’s food offerings at the Maitland Riverside Plaza.

Proud Rooster, a rotisserie chicken, dine-in and takeaway outlet, and burger joint Bergy’s Buns, are just two of the new offerings planned for a November opening, with other options to come soon. In addition to the new offering at Maitland Riverside Plaza, Panthera Hospitality Group will also be introducing Proud Rooster to its other centre, Terrace Central at Raymond Terrace, in addition to a New York-inspired Slice It! Pizza outlet.

“Food is a major focus for our patrons at both Maitland and Raymond Terrace and we intend to meet the increasing demand for quality food options in both those venues,” Panthera Hospitality Group’s Brett Hannah says.

“We will be introducing some exciting new food concepts at both venues over the coming months. The whole of the region, including Maitland and Raymond Terrace, is a booming area and we would like our new food offerings to follow that growth.”
