Michael Vale claims to be the founder of the Australian arm of the popular bar concept, but managing director, John Zappia, said he's no longer involved with the business and is now an unauthorised representative.
We also look at some of upcoming trends, including the growth of specialty cheese venues, and crowdfunding as a means of launching new venue/product concepts.
