Specialty coffee roaster Toby’s Estate has opened the doors to its café 25 Martin Place in Sydney’s CBD.

Over the past 25 years the company has been expanding its footprint across the city, launching numerous venues, including its recently renovated flagship site on City Road in Chippendale.

The 300sqm café is the brand’s biggest venue so far and takes a more elevated approach to its overall design and food offering.

“Having the experience of opening eight Toby’s across Sydney CBD, my vision for 25 Martin Place was to elevate the overall dining concept and compliment Toby’s phenomenal specialty coffee,” says Ali Akl, director of AMA Hospitality, brand licensees of Toby’s Estate.

“The café had to seamlessly fit-in with the luxury surroundings and become the coffee hub for those who flock to the precinct. This site in particular is about legacy for me and I’m proud of what the team have delivered.”

The café will continue to deliver quality coffee and serve classic Toby’s Estate blends, single origin espresso, a selection of filter coffees along with limited edition releases.

Head Chef Sam Woo is leading the kitchen after completing stints at Hubert and Bennelong and is joined by Sous Chef and fellow Hubert alum Noah Lee.

The pair have curated a spring inspired a la carte menu that covers breakfast, brunch and lunch options.

For breakfast, guests can enjoy zucchini fritters with cheese crackers and a sweet potato puree; French toast with candied walnut, blood orange, mascarpone cheese and berry compote and 10 grains steamed, puffed and fried with sautéed mushrooms, smoked chorizo and poached egg.

Lighter lunch dishes include stracciatella with chestnut, peas and asparagus and watermelon ‘steak’ with kalamata olives, heirloom cherry tomato and pickled and fried eschalot.

More substantial options include a cheeseburger made with brioche buns, a 180g Angus beef patty, bacon, lettuce, tomato and caramelised onion.

For customers on the go, the café provides an extensive selection of fresh pastries made to be paired with coffee.

25 Martin Place is open from 7:30pm until 3:30pm Monday to Friday.
