A new Cantonese restaurant is set to launch in The Star Gold Coast this October.

Executive Chef Song Yao Su will lead Uncle Su after 35 years in kitchens across Hong Kong, Las Vegas and Australia.

“I’m thrilled to open the doors to Uncle Su and extend my dining table to friends, new and old,” says the chef.

“I feel so fortunate to cook in this beautiful part of the world, with access to some of the best seafood and produce the country has to offer.”

The restaurant will be located in The Star’s new tower, with additional concepts to be be announced shortly.

Diners are set to enjoy a dim sum menu including siu mai with local pork and prawn topped with abalone and Song’s Peking duck which is marinated for 24 hours before roasting.

Live seafood will see everything from lobsters and crabs to Queensland groper, barramundi, abalone and coral trout on the menu, with all seafood sourced according to a sustainable seafood strategy that revolves around seasonality and a reduced environmental impact.

The venue will also have a tea expert to help guide diners through an extensive offering and discuss the intricacies behind each option.
