The Everleigh has unveiled a slick new interior and launched an extensive food menu, signaling a new direction for the award-winning bar.

Owners Michael and Zara Madrusan (Made in the Shade group) decided to revamp the space after launching the venue seven years ago.

“We’re moving into a new phase for The Ev and looking to up the ante,” says Michael. “We’ve broadened the scope of what The Everleigh is as she grows, offering more for our guests across food, wine and design.”

The team has revised the food offering, moving from lighter eats to a full menu. “We’ve wanted to add a more substantial food offering for a while now, but thought it best to introduce it with the completion of the renovation,” Michael tells Hospitality.

The menu revolves around European fare and includes boozy pickles, white anchovies, a Gruyere melt, eggplant gnocchi and braised beef check pie.

Michael says Australian bars are increasingly putting more effort their food offering, which is essential in the current environment. “The game here in Australia is so good — you can get a great drink in so many places. If you’re not thinking about what else you can be doing for your customers, you’re falling behind. ”

Classic cocktails and house specialties will remain on the menu along with their signature bartender’s choice offering, where bartenders create bespoke cocktails according to customer preferences.

Consumers have welcomed the new-look Everleigh, and Michael says the feedback has been nothing but positive. “I kick myself for not doing it earlier,” he says. “But that would have meant asking my parents for another loan so soon after Heartbreaker. I needed to give them a little time in between favours…”
