After the launch of The Crux & Co in South Melbourne in June, the brand is set to open The Crux & Co Patisserie at 25 Little Collins Street.
Owned Kevin Li (Lights in the Attic and 3Lives) and designed by EAT Architects, The Crux & Co Patisserie seats 40 and will boast a similar offering to that of its older sister, but with a focus of on coffee and sweets treats.
Head pastry Chef Louise MK Lee will be creating macarons, varrine, petit gateau and pastries including a croissant bagel (‘crogle’). All desserts and pastries will be made fresh daily at the Albert Road location, then transported to the Little Collins store.
The Crux & Co Patisserie will also have a range of clair flavours for customers to choose from, including double vanilla, passionfruit, bitter chocolate, pure yoghurt, salted caramel, raspberry, matcha and lemon meringue, as well as macaron varieties including bitter chocolate, salted caramel, Oreo cookies and cream, pistachio, wasabi, yuzi, mint, passionfruit, raspberry, lychee and jasmine.
