Paddington stalwart Tequila Mockingbird will launch a pop-up venue in the Sydney CBD on 2 September.
The four-year-old venue’s latest venture Tequila on York will bring the brand’s signature Latin American share pates, as well as it’s mezcal- and tequila-heavy drinks list to the 50 York Street location.
Executive chef John Frid, who’s been with the team since 2017, has developed a 4-course/eight dish set menu, which will constantly evolve. Think dishes such as Hiramasa Kingfish Ceviche, watermelon sorbet, chile verde, eschalot, sea bananas, plantain frito; Spinach Queso Tamales, sheep milk feta, rajas poblanas, corn veloute, pistachio; and Wagyu Tajima Rump Cap MBS 6+, bush tomato salsa and accompanying sides.
The set menu comes is $89 per head.
Previously a printing shop, the space features exposed sandstone walls, imposing archways and timber beams.
Bookings are essential and guests will receive a number to call on arrival. They’ll then be escorted to the concealed location for a private dining experience.
Operating in line with COVID regulations, the pop-up will allow bookings for groups of up to 10 for lunch or dinner Wednesday to Friday. Lunch will offer one sitting at 12pm, while dinner will offer two at 6pm and 8.30pm.
