Inner-city Italian restaurant Enoteca Ponti will shed its current iteration to make way for EP Wine.
The Potts Point eatery in Sydney, which took over the former Monopole location, has also appointed a new head chef to usher in EP Wines’ fresh direction.
Fabio Salvato began his culinary career in Italy before moving to London and later Sydney to work in the kitchens of Totti’s, Icebergs Dining Room and Bar, Lumi, and Bistro Rex.
Salvato is focusing on creating a selection of pastas and mains as well as smaller-format snack dishes designed to complement EP’s global-leaning wine list, which will see a combination of traditional and modern styles available.
“I love the freedom that creating snacks allows me,” says Salvato. “There are so many ingredients here that I can use to make the dishes that I grew up with taste modern and fun.
“I love socialising in wine bars, so I’m excited to show you my version.”
Wines will be available by the glass and bottle, with weekly premium Coravin wines on offer. For those who are more partial to a cocktail, expect all the classics from the team.
The team is rounded out by bar manager Liam Porter and Owners Josh Dunne and Cristian Veterani
There is room for 50 seated diners as well as 14 bar seats for walk-ins, with EP Wines trading 5pm until late Wednesday and Thursday and from 12pm until late Friday to Sunday.
