Alibi Bar & Dining is back with a fresh look and offering on Woolloomooloo’s Finger Wharf in Sydney.

Leading plant-based pioneer Shannon Martinez has teamed up with mixologist Andrea Gualdi for the reopening serving up modern, Mediterranean-inspired dishes.

Housed in a newly refurbished ‘indoor-alfresco’ dining room, Martinez has drawn on her Spanish heritage to craft a menu that showcases her flair with plant-based cooking.

“I’m thrilled to be part of Alibi’s new direction,” says Martinez. “This will be my first project in Sydney, and I look forward to bringing a taste of plant-based Latin cuisine to the bay side and giving Sydneysiders their own version of Smith & Daughters.”

Some of the highlights include Martinez’s famed, plant-based labneh, yoghurts and cheeses alongside traditional Spanish tortillas with no-egg aioli and a cacio e pepe with no cheese.

Drinks wise, Gualdi has curated a modern and sustainable offering that continues the Mediterranean-inspired theme and also features zero-alcohol options.

Expect a range of signature, and experimental cocktails alongside a sustainably sourced wine list featuring boutique Australian producers growing Mediterranean varieties.

“We have worked closely with Shannon Martinez and her team to ensure fantastic pairing options, and have created drinks using ingredients that complement the food menu where possible, in order to minimise single use products,” says Gualdi. “Just like a good meal doesn’t need meat, a good drink doesn’t need alcohol; our drinks list boasts some great Zero Proof cocktails which are bound to be a hit given the growing interest in minimising the amount of alcohol we consume.”
