Sheraton Grand Sydney Hyde Park has welcomed a new woodfire grill restaurant and bar Sydney Common.

Head Chef Jamie Robertson is leading the kitchen team under mentorship of Sepia talent and award-winning chef Martin Benn.

Robertson comes from time at London’s Hide and the Michelin-starred The Capital, plus Ester and The Bridge Room here in Australia.

“I’m excited to introduce Sydney Common, a culmination of my culinary journey that has been profoundly influenced by Martin Benn’s mentorship,” says Robertson.

“I’ve always looked up to Martin, and during my time in London, a mentor often said to me that I should work for Martin Benn once I return to Sydney. So, it feels like a full circle moment to now join forces for the launch of Sydney Common.”

The venue’s woodfire grill plays a starring role in the menu which also features local producers such as Baker Bleu, CopperTree Farm, Ranger’s Valley, and LPs Quality Meats.

Some of the highlights across the menu include a whole John Dory fish with pil pil butter; Yamba prawns with chilli and shiso butter; wagyu bresaola with smoked beetroot; and desserts such as a passionfruit custard with orange and white chocolate.

The eatery boasts views of Sydney’s Hyde Park, and guests can order from the a la carte menu, bar menu, set menu, or tasting menu named the Market Menu.

Benn has been working with Robertson over the last few months to guide him and connect him to local producers.

“I’ve had the pleasure of working with many great young chefs and as I move into this next phase of my career having the time and opportunity to be able to guide new young talent is a real honour,” says Benn.

“I still love being creative in the kitchen, but the thing that excites me most right
now is working with the next generation of Australia’s best chefs.”

Drinks-wise, Head Sommelier Sebastian Brogren (ex-Bentley Restaurant and Bar) has crafted a 260-bin wine list with a mix of Australian and international drops.

Sydney Common opens today for dinner daily, and lunch on Friday and Saturday.
