‘The Bottom Line’ from Simplot Foodservice is a webinar series with a difference.

Having weathered the first wave, it appears that clever operators a more prepared to deal with the second and now have a protocol in place to ensure they can pivot with agility should there be further restrictions placed on them.

Chris Bonello, Group Executive Chef for Zagame in Melbourne has been one of the worst hit, yet he remains positive, choosing to make things fun by endeavouring to push his boundaries.

Andrew Baturo, Director and Co-owner of Dap & Co. with multiple venues in Brisbane is also positive despite the uncertainty: “The closure gave me a snap-shot of my business. It froze it in time, which you don’t often get a chance to do.”

For Stephen Hunt, Managing Director of Hunt Hospitality, with several venues on the NSW mid-north coast, staff mental health is front of mind, offering his team free confidential visits to psychologists.

Brett Deans, from Commercial Kitchen Management offers advice to pubs to ensure profit margins for owners and make sure customer satisfaction is maintained whilst outlets adapt their business models.
