The Star Sydney will open its second concept with new restaurant group Dining Concepts.
Rumble is set to launch this May, and will see the restaurant lean into South-East Asian cuisine, specifically dishes from Malaysia, Singapore and Indonesia.
Head Chef Benjamin Tan has designed a menu that’s inspired by his Malaysian roots and experiences working in restaurants across the globe.
“I’m so excited to be able to share some of the incredible multi-cultural flavours I’ve grown up with in a way that I hope makes Australians fall in love with South-East Asian food all over again,” says the chef.
Confirmed dishes include black Angus short ribs infused with beef rendang; dried red curry with smoked duck and deconstructed prawn laksa. Banquet options will also be available for those who like to sit back and watch the food roll in.
“Sweet, salty, sour and spicy are not only the four most common tastes but they are also all crucial elements to creating an exciting dish and bringing quality ingredients to life,” says Tan
Jacky Huang has taken on the role of bar manager and is developing a cocktail list that links in with Rumble’s core pillars of sweet, salty, sour and spicy, with drinks to hero spices, herbs, teas and flowers sourced from across Asia.
Bookings are now open for Rumble, which will launch in mid-May.
