Shannon Martinez has announced that she will be helming Ovolo’s vegan restaurant Alibi Bar & Dining in Sydney’s Woolloomooloo.

The plant-based chef will make her mark in the city for the first time, leading the venue’s new culinary direction when it launches next year with a revised fit out.

“I’m thrilled to be part of Alibi’s new direction. This will be my first project in Sydney, and I look forward to bringing a taste of plant-based Latin cuisine to the bay side and giving Sydneysiders their own version of Smith & Daughters,” says Martinez.

 “I love working with Ovolo; our venture in Melbourne, Lona Misa, holds an extremely special place in my heart and I’m super excited to be able to continue this relationship in a new part of the country.”

The chef has curated a menu that is heavily influenced by her Spanish roots and includes some of her signature dishes.

Executive Chef Jiwon Do is also joining the group after time at QT Wellington’s Hippopotamus Restaurant & Bar and will help implement Martinez’s culinary vision.

On the beverage front, Ovolo’s Beverage Director and renowned mixologist Andrea Gualdi has curated a sustainable drinks list that covers Mediterranean G and Ts, spritzes, high-tea cocktails, non-alcoholic options and a range of beers.

The wine selection will be 30 per cent vegan and consist of Mediterranean varieties made by local Australian producers.

The new-and-improved Alibi Bar & Dining will have a newly refurbished indoor alfresco dining area designed by interior design and architecture studio Luchetti Krelle.
