The Icebergs Group has confirmed Scout will end its residency at The Dolphin.
The Matt Whiley-run bar opened its doors in Sydney one year ago on the top level of the Surry Hills pub.
But there’s no need to be sad – it’s not the end of Scout Sydney. The team have confirmed it will open in a permanent location which will be announced in the coming months.
“This last year launching Scout into Sydney at The Dolphin Hotel and now into our new permanent space in 2020 has given me a huge sense of pride for what we have achieved in such a short space of time,” says Whiley.
“ I have developed and created over 100 new recipes with my team who I am incredibly proud of.”
In addition to running Scout, Whiley has been appointed as beverage director of the Icebergs Group and will work across venues including CicciaBella, The Dolphin and Bondi Beach Public Bar.
Scout’s final day of trading at The Dolphin is on 21 December.
