Chef Ryan Hong (ex Rockpool Bar & Grill and Black by Ezard) will be taking on the head chef role at the new five star Primus Hotel Sydney.
Having trained extensively in Chinese, Japanese and Korean cuisine, Hong will bring a finely crafted Asian influence to the kitchen of the new venue.
Most recently, Hong has held positions at the Parkroyal Darling Harbour where during his three year tenure, he took on the position of head chef at ABODE Bistro & Bar.
At Primus, Hong will champion local produce by creating contemporary Australian dishes with an Asian twist.
“I enjoy having the freedom to mould the restaurant, the flavours and my team,” says Hong. “I love the accomplishment of taking a space from nothing to a successful, buzzing restaurant.”
Located in the heart of Sydney’s CBD, Primus Hotel Sydney is located in a 1930’s heritage-listed building that once housed the Sydney Water Board.
The Primus Hotel Sydney is scheduled to be unveiled at the end of 2015.
