Robata Japanese grill is bringing the age-old Japanese tradition of fireside cooking to Melbourne.
The team behind Argentinian steakhouse San Telmo have ventured into the art of Japanese fireside grilling with the opening of the new restaurant.
“The grill has always been my greatest inspiration, and it’s still front and centre even in this new chapter of my career,” says Head Chef Stephen Clarke. “To be able to combine that with the memories and experiences I had in Japan is really terrific.
Expect a classic yakitori and kushiyaki menu chock-full of familiar favourites such as chicken thigh with tare, tsukune with egg yolk, Wagyu beef, Skull Island prawns and pork belly with yuzu kosho.
In addition, Robata will deliver vegetarian options including turnip with nori salad and shitake mushroom cooked on custom-built robatayaki grills.
Fresh sashimi, nigiri, pork katsu and select cuts of premium beef are also on offer.
“The menu will offer new flavours and dishes that fans of The San Telmo Group have not seen on our menus before,” says Clarke. “While charcoal grilling is still the focus, the rest is brand new and we’re really excited.”
Rare imported Japanese whiskeys and a full range of Nikka Japanese whisky are a part of the beverage list alongside sake and a cocktail list covering a sesame whisky highball or the Ancient Remedy; a Japanese take on a Penicillin.
Robata is open from 5pm until late Wednesday and 12pm until late Thursday to Sunday.
