Following the recent departure of previous executive chef, Claudio Morales, Regatta Restaurant and Bar has now appointed chef Damien Pignolet to the position.

To ensure a smooth transition, Morales will continue to work in the kitchen during the busy November/ December period, with Pignolet officially taking over the kitchen on 1 January, 2016.

All existing staff will retain their positions, however Pignolet is on the hunt for a new head chef.

Pignolet, who’s best known for his time at Bistro Moncur and Claude’s, said that he is delighted to be joining the Regatta team.

‘’I couldn’t be more delighted to be joining Regatta. It is an iconic location, the new fitout is simply stunning and the owners are prepared to invest in making Regatta a great harbour side seafood restaurant. And after Claude’s and Bistro Moncur, I feel like the Eastern Suburbs are very much my patch.’’

Regatta general manager, Peter Nield was pleased to announce the appointment of Pignolet.   

‘’We are all very excited about Damien coming on board. He brings so much experience and enthusiasm and his food is wonderful. Personally, it is great getting the old team back together, having worked for twenty years running the Woollahra Hotel and Bistro Moncur’’.
