A new restaurant will be opening within the Metro Hotel Perth as part of the property’s $14 million renovation.
Named Red Bill Restaurant, the 100-seat restaurant will serve modern Australian cuisine for breakfast and dinner seven days a week.
Catering to both hotel guests and locals alike, the menu has been created by executive chef Jesse Emerton-King and comprises fresh, in-season local produce. Prior to taking the on the executive chef position at Red Bill Restaurant, Emerton-King has held a number of roles within the Sydney food scene along with overseas stints in England and Germany.
“There is a real food scene in Perth, and people are keen to try new dishes which is great to see,” says Emerton-King. “What I can promise is that our diners will enjoy delicious produce-driven contemporary Australian cuisine.”
The new dinner menu will include interesting dishes such as beer and miso lamb ribs, radish and asparagus; and grilled asparagus, confit egg yolk, buffalo mozzarella for entre. Mains include lamb linguine, asparagus, onion, garlic, chilli, cherry tomatoes and white wine; and roasted fig, asparagus and cous cous salad, herb yoghurt drizzle.
Red Bill Restaurant is slated to open later this month.
