Sydney is set to welcome a multi-level hospitality concept in July with the opening of the Porter House Hotel – MGallery.

The accommodation and hospitality offerings have been split into two neighbouring buildings on Castlereagh Street.

Porter House is located in a heritage-listed structure that has been returned to its former glory over four years, and sees five levels dedicated to food and beverage.

The building will house Henry’s Bread and Wine; Dixson & Sons brasserie; Spice Trader bar and two floors covering private dining and function spaces.

“The intention was always for the hotel to be a sophisticated supporting act to the three dining and drinking destinations of Porter House,” says Erin Proud, director of guest experience.

“The building hasn’t been used in its entirety for many decades, so we wanted to provide Sydneysiders and visitors to our city with an opportunity to explore and connect with this majestic, timeless building through these new F&B experiences.“

Henry’s is located on the ground floor and will operate from day to night.

Launch dishes include a Wagyu pastrami Reuben; blue eye bagel and pork and pistachio terrine. The venue will also have a bar where guests can stop by for a drink.

Dixson & Sons spans a massive 200sqm across the first floor and will seat 90 guests in the dining room.

Former Fish Butchery chef Emrys Jones has taken on the role of executive chef and is focusing on locally sourced produce, with the majority of ingredients provided by New South Wales farmers.

Jones will spearhead the culinary direction of not just the brasserie, but every menu within Porter House.

Dixson & Sons’ final dishes are in the process of being finalised, but diners can expect salt-baked beetroot with labne, honey, buckwheat and marigold and lamb short saddle with eggplant miso puree, brassicas and chocolate jus.

Spice Trader is located at the top of the building and will launch to the public in spring.

The 22sqm venue’s centrepiece will be a 16-metre sage marble bar, with bartenders serving up bespoke cocktails.

Henry’s and Dixson & Sons will launch in July, with opening dates to be confirmed in due course.
