Sydney’s Porcine restaurant has announced a limited collab with Buffalo Trace bourbon whiskey.
Chef Nicholas Hill has curated a box that revolves around Berkshire pork and covers a selection of dishes for diners to enjoy at home.
Hill is a champion of Berkshire, and told Hospitality the restaurant always selects the pig for its unrivalled flavour.
“We pretty much only use Berkshire … there’s something about the flavour of the fat of a pig that’s unsung,” he says. “We generally see improvements with the pigs all the time.”
The box encompasses a Berkshire pork chop; prune pate en croute that features Buffalo Trace-smoked pork; cauliflower cheese pie, bourbon BBQ glaze, spring vegetables and a banoffee and bourbon trifle.
A bottle of Buffalo Trace is also included in the box, which is priced at $150.
Orders are limited and must be made by 5pm Thursday 23 September for delivery or pick up on Friday or Saturday.
