The Ritz-Carlton, Perth will welcome a new rooftop bar and lounge on 15 November 2019. Songbird will feature a menu inspired by native botanicals.
Executive chef Jed Gerrard and bar manager Eoin Kenny have collaborated on the menu to create a harmonious dining experience. The bar and lounge will offer an informal grazing menu with local ingredients from both the sea and land. Barbecued meats, fresh seafood and seasonal produce will be complemented by creative and refreshing cocktails, local spirits, craft beer and wine.
Signature cocktails include The West, which features The West Winds Sabre Gin, Regal Rogue Wild Rosé Vermouth, Jarrah honey water and Singlefile Chardonnay Verjus, with a fennel and strawberry dust.
Throughout the day there will be a classic martini service with local native pickles and condiments. Aperitivo — with a strong focus on local vermouths and Australian botanicals — will be offered in the early afternoon, while the Sunset Hour will feature a songbird inspired cocktail and an accompanying hors d’oeuvre.
The opening is part of the launch of The Ritz-Carlton, which will also be home to restaurant Hearth.
