The team behind Japanese restaurant Mr. Miyagi, is set to launch an exclusive dining experience in partnership with QT Melbourne on 30 June.
Mr. Miyagi in the Big Smoke will operate Thursday to Saturday for 6 weeks in QT Melbourneâs Hot Sauce Laneway on 8 Portland Lane.
The menu will include a range of slow-cooked meats smoked over binchÅtan â a type of Japanese white charcoal.
âThis idea was sparked whilst Executive Head Chef, Kyle Doody was camping on the banks of the Murray and cooking over a searing hot fire pit,â says Mr. Miyagi Founder, Kristian Klein.
âThe flavour of wood smoke is just as important in this menu as salt. We wanted to integrate some of the amazing flavours that everyone loves about smoky foods with our signature Mr. Miyagi style: chopstick-able, delicate but ultimately, mind-blowingly delicious.â

The offering is designed to share and includes a range of starters, larger dishes, sides and dessert.
Guests can kick off the dining experience with smoked salmon (cooked and prepared tableside), tempura cornballs, yellowfin tuna on sesame crackers or kurobuta pork sticks.
Larger dishes include togorashi lamb chop paired with edamame and pea smash; smoked sticky soy scotch fillet with shichimi spice and a Japanese-style tortilla made from nori seaweed.
A miso butterscotch parfait with sugar and black sesame will be available as a dessert option.
To compliment the smoky-themed menu QT Melbourne Bar Manager, Joshua Hampshire, has curated a cocktail list using Japanese spirits from House of Suntory.
One highlight is the Golden Gai which is a contemporary take on the Manhattan.
