Republiq shisha bar and grill has opened in Sydney’s Brighton Le Sands, offering up a menu inspired by the Middle East.
The 220-seat restaurant is spread across two levels and features a shisha bar, offering up to 15 different flavours.
Chef Bektas Özcan is running the kitchen and has split the menu to cover five cuisines including Spanish, Moroccan, Greek, Lebanese and Turkish.
“We’ve incorporated the Mediterranean flavours brought to the Middle East by the ancient spice trail,” says Özcan.
“The dishes are a combination of street food, local techniques and traditional recipes.”
Menu items include taramasalata with salmon roe, lamb neck tagine with fig, almond and sweet potato and barramundi with broad beans and artichoke.
The venue also has plans to introduce a weekend breakfast menu.
