Restaurateur and author Opel Khan has announced the appointment of a new head at his Potts Point restaurant Metisse.

Khan’s 21-year-old daughter Lucinda Khan, who has been sous chef at the restaurant since 2019, will take on the role, leading the fine dining degustation kitchen.

“Lucinda’s passion for food and cooking has been evident since she was a young girl,” says Khan. “Any chance she could get, she’d be in the kitchen with me learning, pretending to cook and make up dishes. Lucinda has gone from strength to strength and I’m beyond proud of how talented and passionate she is.”

The father-daughter daughter duo have reworked the menus to best suit special occasions, with a focus on sustainability as well as luxury.

Two new menus, ‘The Journey’ and ‘The Earth’ twist classic French dishes, with no produce or ingredients wasted, including peel and pulp.

Totalling eight courses, ‘The Journey’ features dishes such as Texture of tomato, which sees tomato prepared five different ways, as well as a take on duck a l’orange which sees the younger Khan creating a mille-feuille using duck leg meat, served alongside the breast.

Also eight courses, ‘The Earth’ is vegetarian- and vegan-friendly. The Texture of Tomato also features on the vegetarian option along with a disc of confit pumpkin surrounded by charred eschalots and dressed with pistachio snow, and morel consommé.

Métisse’s wine list includes premium French and Australian wines, including Châteauneuf-du-Pape, Chateau de Meursault, Yarra Yering, and Grant Burge. Cocktails range from classics through to Métisse signatures such as the Boulevardier, French Martini and Smoked Old Fashioned. There’s plenty of non-alcoholic cocktails too, made with house fermented fruit and vegetable juices along with flower and spice infused sugar syrup.

Métisse, which opened in early 2019, is a family affair. While Opel and Lucinda run back-of-house, Opel’s wife Julie and daughter Jasmine look after front-of-house.

Located at 5-9 Rosyln St, Potts Point, Métisse is open for dinner Tuesday to Sunday from 5.30pm and lunch Thursday to Sunday from midday.
