It’s been revealed Merivale will open Totti’s at the recently acquired 3 Weeds Rozelle pub.
Justin Hemmes added the venue to his ever-expanding portfolio in April, but has only now unveiled plans to spearhead a restaurant.
That restaurant is slated to replicate Totti’s, which opened under former Pinbone chef Mike Eggert at The Royal Bondi.
Known for casual Italian fare (wood-fired bread, antipasto, proteins cooked over charcoal), the restaurant has quickly become a favourite for Sydney diners since opening late-2018.
Hemmes told Good Food Merivale will lodge a development application shortly with plans to renovate the back of the pub as a restaurant and bar while retaining the pub.
No official opening date has been confirmed, but it’s anticipated the concept will open by the end of the year.
