Merivale has announced a new Spanish tapas bar located on Palings Lane in Sydney’s CBD.

In her return to Merivale, Lauren Murdoch has collaborated with executive chef Jordan Toft to design the menu, which will constantly evolve.

“Bar Topa will be the perfect pit stop for someone on the go, but who still wants to enjoy the pleasures that food and wine play in one’s day, and enjoy a vibrant atmosphere in close quarters”, says Toft.

Small bites and snacks are available including sliced jamon on crisp bread and whipped salted cod. A range of tapas-style dishes are also on offer cooked on la plancha — a flat metal grill from Spain that reaches high heats.

Larger dishes include chorizo, cuttlefish with parsley, garlic and olive oil, whole sardines, sautéed chicken liver, patatas bravas and grilled vegetables.

Drinks are served as half-size pours, prompting guests to sample a range of cocktails, beers and wines. Sangria is also available on tap.

Cocktails are all priced at $8, and diners can choose from Marques (Pali Cortado sherry, Campari, sweet Vermouth); La Perla (Altos Reposado tequila, pear liqueur, Manzanilla); Ti-Negroni (Beefeater, Campari, sweet Vermouth) or a Micro-Spritz (Aperol, sparkling, soda).

The concept of Bar Topa is inspired by the casual experience of eating at a tapas bar, with room for 40 standing guests and a handful of stools.
