Coogee Pavilion is set to get a helluva lot busier with the launch of three new concepts on the venue’s middle floor.
The group will debut Mimi’s restaurant, Will’s cocktail bar and Una Más wine and tapas bar in January 2020 after five years of development.
Describing the project as one of the most ambitious yet, executive chef Jordan Toft is spearheading the culinary direction of the venues.
“Each experience has its own special personality and identity, but all are inspired by the generosity of regional dining around the med – those moments when your heart rate slows down, you’re completely at ease and filled with gratitude for life’s simple pleasures,” says Toft.
Mimi’s will revolve around quality produce cooked without smoke and mirrors and a 500-strong wine list.
The cocktail bar’s drinks list will be inspired by European favourites with Una Más serving as a casual spot for diners to grab a bite and a drink. “Think a chilled Chablis or vermouth, with an oyster just shucked, seafood off the plancha and anchovies on fresh bread,” says Toft.
Official opening dates will be announced shortly.
