Merivale has continued its Northern Beaches expansion with The Collaroy, which is set to open its doors in May.
The venue will be taking bookings from 19 May and features elegant, casual fare under the culinary direction of executive chef Jordan Toft (Bert’s Bar and Brasserie).
The Collaroy will be an all-day dining destination where guests can pop in for breakfast, lunch, dinner or snacks.
The ground floor’s offering will change throughout the day. Breakfast options include house-made pastries and breakfast pizzas while lunch dishes include healthy bowls such as toasted faro with avocado, rocket, boiled egg and grilled haloumi with lemon and olive oil.
Snacks will roll out from the evening, with a white- and rose-driven wine list complementing ham croquettes with spicy aioli and anchovy toast with shallots.
Dinner options will change throughout the week and will include eggplant moussaka, pork and fennel sausages with roast pumpkin and a Northern Beaches take on a Sunday roast.
A restaurant dishing up local seafood and meats from a charcoal grill is located upstairs alongside two bars.
Patrons can enjoy burgers from the bar menu or wood-fired pizza from Vincenzo Biondini, which can be ordered day and night.
