Merivale has revealed a new residency at The Whale Inn in Narooma after purchasing the location last month.

Elsa Marie and Julian May will run Chez Dominique after time at their bistro La Vierge and Septime in Paris, France, and Sydney’s 10 William Street.

The pair returned to Australia last year and moved to the South Coast where they began hosting private dining experiences and learning more about organic farming practices.

“We have fallen in love with all of the incredible ingredients the Eurobodalla Shire has to offer,” says May and Marie.

“We have a strong passion for local, high-quality, sustainable produce and wine, and can’t wait to share our cooking with the local community.”

Chez Dominique will run for the coming months and see produce sourced from four farms including Borrowed Ground, Queen Street, Old Mill Road and Stepping Stone.

The team will grow a select range of ingredients on-site and have their own chickens.

Diners can look forward to fuss-free cuisine that heros the best of the area.

Locally caught whole fish will feature on the menu alongside Narooma oysters, pork and beef from Martin’s Ridge Farm, duck from Tathra Place and dairy from Tilba and Bodalla.

Sourdough will be baked daily using organic flours, pulses, grains and sugars.
