Jasper Avent has been named the new head chef at The Town Mouse in Carlton.
Replacing George Tomlin, who is departing in September for Europe, Avent will work in collaboration with executive chef Dave Verheul as the founding team prepares for its next venture.
Avent’s previously worked at notable venues including Albert St Food and Wine, The Lakehouse and Estelle Bistro.
The Town Mouse team plan to open a wine bar downstairs from the restaurant in October.
