Vietnamese-Australian Chef Bao La will be touching down in Melbourne for a one-off dinner event at Firebird on 14 July 2022.
The former Le Garcon Saigon (Hong Kong) chef will be cooking up a four-course meal that combines modern cooking techniques with authentic Vietnamese flavours.
“Being a second-generation Vietnamese Australian chef, born and raised in Brisbane, I am presenting flavours that reflect my time in Vietnam,” says La.
“I have been living there the past number of years and I am bringing dishes that are not your standard dishes but a modern-pop version that stays true to the flavours of Vietnam.”

The experience will begin with snacks such as roasted beetroot tartlet with whipped tofu, pippis and nước mắm gừng (garlic and chilli fish sauce), calamari skewers with ớt sa tế (chilli oil) and lamb ribs topped with an orange nước chấm glaze.
Guests will then receive an entrée of Southern and Western Rock lobster with egg noodles and shellfish butter.
Mains include lemongrass pork chop with fermented bean curd and chilli oil, canh of conpoy and pennywort, stir fried sweet potato leaves, garlic fried rice and a plate of Vietnamese pickles.
To finish off La will be serving up a dessert of smoked coconut ice cream and chocolate fondant pudding.
The dinner includes an all-Australian beverage pairing for $175pp.
Tickets are $120pp without the beverage pairing.
