Aria restaurant and award-winning bar Maybe Sammy have teamed up for an October collaboration.

Maybe Aria will see the two forces come together at the harbourside restaurant every Wednesday night for bespoke cocktails and snacks.

Maybe Sammy’s team have curated bespoke cocktails for the collab including the Fly Me To the Moon (gin, sandalwood, aquavit, vermouth bianco); Aria di Sammy (pineapple skin Madeira, cocci Americano, bitters and aromatic bubble) and the Gran Finale (figs, mister black single origin, Oloroso sherry and honey).

Aria’s Executive Chef Joel Bickford’s has designed the snack menu, which covers dishes such as raw scallop with potato and caviar and macadamia and acacia eclair. An a la carte menu will also be on offer.

Guests will be able to sample two cocktails and two snacks for $85 during a 1.5-hour sitting.
