The Sydney pastry shop responsible for giving the city its best pithivier is bidding a fond farewell to co-owners Lorenzo Librino and Benji Spencer.
The business will now be run by fellow founder and Lumi chef Federico Zanellato, who launched Lode in Surry Hills at the end of 2021 alongside Librino.
The news was announced on Instagram yesterday, with a post paying tribute to the pair.
“Your passion, dedication, and incredible hard work have shaped Lode into what it is today. As Lorenzo and Benji embark on new adventures, we’re eager to witness where your creative takes you next.”
While Librino and Spencer won’t be part of the day-to-day operations of the business, they will still be involved in a reduced capacity from 1 February.
As Zanellato steps into the lead position, Lode fans can expect “a few tricks” in pastry form.
The chef spoke to Hospitality around the launch of Lode, which now has a second location in Circular Quay, saying: “We’re going to focus and make sure that everything is of a super high standard and has interesting flavour combinations in the pastry.”
It’s safe to say the team has delivered in the years since, launching several innovative pastries over the years including a panettone croissant, jamon and ricotta tart, and a tiramisu canele.
