Melbourne wine bar Little Odessa has announced Ryan Dolan as head chef.
Dolan joins the venue, run by brother and sister team Stefan and Sofia Soltys, after time at Christian Tetedoie and La Bijouterie in France.
The chef also worked in the kitchens of Amaru and Ramblr in Melbourne and Aaron Turner’s Geelong restaurant, Igni.
“I really enjoy cooking food that is influenced by seasonality and comfort, made to be enjoyed in a fun environment,” says Dolan.
Diners can also look forward to the launch of Sunday Prix Fixe lunches with two- and three-course options available.
