Byron Bay’s Light Years restaurant has relocated to Jonson Lane, unveiling a fresh fit-out and menu.
The venue closed the doors of its original location in October and has appointed former Mjolner talent Joachim Borenius as head chef to spearhead Light Years’ new chapter.
“Bringing on Joachim as head chef feels like the perfect step in the evolution of the Light Years brand – our expansion in size means a bigger kitchen, and greater capacity to create new and exciting dishes,” says Co-Owner James Sutherland.
“The fresh perspective Joachim brings to the brand and his experience across a range of cuisines means we can continue to produce punchy dishes in the bold Light Years style with new ingredients and flavours.”
The menu still features plenty of share plates designed for sharing and includes prawn toast donut with yuzukosho dipping sauce; salt and pepper tofu; BBQ lamb ribs and typhoon shelter honey king prawns.
The cocktail menu has also been overhauled and extended to cater to the new dining room, with additions covering a kiwi matcha margarita and szechuan shiso-infused gin cocktail with Aperol, vermouth and orange.
“We are so proud to be opening this new venue in the heart of Byron Bay, where our journey began, so that the community who helped us grow the brand can continue to be a part of its evolution,” says Sutherland.
Light Years is open seven days for dinner and lunch service Friday to Sunday.
