Ultimo’s Lord Wolseley Hotel will relaunch their dining experience with chef John Javier running the kitchen.
After a number of years running the hotel, twins Teddy and Danny Sullivan decided to bring Javier on board to spearhead the House Diner’s new culinary direction.
Best known for running the now closed Master restaurant, Javier has most recently worked as executive chef at Happy Paradise in Hong Kong.
The menu will offer modern pub fare including Bolognese with lamb belly, tripe and mint and a Szechuan fried chicken burger.
“There’s no ego here. It’s just fun, tasty food,” Javier tells Australian Hotelier. “We’re making all our own sauces, breaking down and ageing all our fish, and using quality vegetables.”
The Sullivan twins have also noted an increase of patronage to the Hotel thanks to Javier.
“We’re already seeing trade that we wouldn’t have got without him – and without any press,” says Teddy. “So I think his food is speaking for itself, and word of mouth is doing the rest.”
Javier will be at the hotel until September with plans to spearhead a new project later in the year.
