Chef James Privett has been named group executive chef at the W. Short Hotel Group, which operates venues including The Glenmore, The Australian Heritage Hotel, The Royal Leichhardt and The Tudor Redfern.
Over the past 18 years, Privett has led kitchens at leading Sydney restaurants and has worked under hospitality icons including Damien Pignolet, Janni Kyritsis and the late Anders Ousback.
He has been head chef at Urban Purveyor Group’s The Cut Bar & Grill, and group executive chef at Applejack Hospitality. At the latter, he was responsible for all five venues in the group.
Classically trained in French cuisine, Privett’s preference for light and seasonal ingredients is evident in the group’s menus.
The Royal Leichhardt and The Tudor Redfern debut their new menus this month, and The Glenmore and The Australian Heritage Hotel in The Rocks will launch theirs in the near future.
“We need to meet the expectations of the Sydney community in 2016 and into 2017 while still offering classic pub food. This gives our customers a reason to come back time and time again,” said Privett.
