Sydney is gearing up to welcome its latest rooftop bar at the InterContinental this September.
Aster Bar will open on level 32 of the building and is part of the hotel’s $110 million renovation, which will also see the launch of all-day dining venue The Treasury.
“From a food and beverage point of view, the hotel is transitioning from a luxury Sydney establishment to a contemporary operator and frontrunner on the international bar scene,” says Behzad Vaziri, newly appointed director of bars.
Proof & Company have consulted on the drinks offering at Aster, which will hone in on cocktails crafted with Australian ingredients and offer a menu anchored by local produce.
The bar, designed by Woods Bagot, features indoor and outdoor seating for patrons alongside panoramic views of Sydney Harbour and surrounding skyline.
Meanwhile, The Treasury will open from morning to night and see chefs work with seasonal produce to create classic dishes.
“Aster Bar and The Treasury are not your typical hotel bars,” says Jennifer Brown, general manager.
“They are destinations and experiences in their own right; designed and developed to not only celebrate the building they’re located within, but to also sit proudly and independently within Sydney’s sophisticated bar scene.”
The two new concepts will open to the public in September.
