The team behind the Hobsons Bay Hotel have signed the lease for The Flying Duck Hotel in Prahran.
Located on 64 Bendigo Street, the venue will be fully transformed to include an 84-seat open-plan dining room, public bar and beer garden.
Hobsons Bay Hotel Founder Brendan Lang has put together a team that consists of Head Chef Ben Pigott (Hobsons Bay Hotel, Supernormal), Michael Conlon (Scott Pickett Group), Tom Bulling (Hobsons Bay Hotel) and Drew Gibbs (Rustica).
Together the kitchen team will work to create a pub offering with restaurant execution.
“We hope we can carry on the tradition of being a local institution, and provide a modern space for the community to gather for a meal or just pop past for a beer and watch the footy,” says Pigott.
“We have designed a new dining space which we hope will excite locals, creating a mixture of both a public bar atmosphere at the rear, and a more polished restaurant service in the dining room at the front.”
The menu has been curated around a woodfired grill and have a classic brasserie influence.
Example dishes include Victorian steak, roast duck, rock oysters and tuna sashimi plus a range of snacks.
Pub classics such as a cheeseburger and fish and chips will also be included in the mix.
The Flying Duck is set to open early September 2022.
